Hearty Barley & Chicken Soup

Barley is a versatile and nutritious whole grain that has been cultivated for thousands of years!

Barley comes in several forms:

  • hulled barley

  • pearled barley

  • barley flakes.

Barley has been associated with several health benefits like:

  • improved heart health

  • better blood sugar control

  • improved digestive health due to its fiber content

What you Need:

  • 1 medium onion, chopped

  • 4 celery ribs, chopped

  • 3 carrots, peeled chopped

  • 2 minced garlic cloves

  • teaspoon salt ⁄

  • teaspoon black pepper

  • 2 cups chopped mushrooms

  • 2 cups cooked chicken breast, chopped

  • 1 cup pearl barley, picked over and rinsed

  • 8 cups chicken broth

What to do:

  • Heat the chicken broth and pour into the slow cooker.

  • Place chopped veggies, onions, garlic, celery and carrots in the microwave for 5 minutes.

  • Spoon veggies into slow cooker and cook on HIGH for 2 hours.

  • Heat up mushrooms in microwave for 2-3 minutes.

  • Add chicken, rinsed barley, salt & pepper into the slow cooker.

  • Cook on HIGH for another hour.
